I think you have collectoritis.. Anyway for the rosette plants id get a single for each. A few more of cryots would be fine. Stem plants on the other hand you can go as much as you want. From a few to half your tank. Its merely your choice.
The lilies and the aponogeton get HUGE, so I would only pick one to go with. The apon is gorgeous, but will probably go into hibernation after a few months. The stellata is a nice red plant, but you have to make sure to cut off the surface-shooting leaves before they reach the top - if they do get to the top, they won't stay bushy and the rest of the leaves that grow will try to reach the top. I haven't had any experience with Barclaya, but it looks like a fun, easy plant. I'm very tempted to get one. LOL
The sagittaria isn't from Asia, so you might want to scratch that from the list - the crypts should be a good substitute for that. If you want something more specific to Asia than riccia, pellia is a good plant - it's very easy to grow.
If you get the Eriocaulon, let me know how it does for you. It's another plant that has piqued my interest.
The crypt parva is a good plant, because it stays small and works well as a foreground plant. I would suggest getting quite a few of them, since they are slow-growers.

riccia isn't as hard to grow as one would think. i've found it pretty easy and versatile since i'm actually growing in a terrarium as well as my tanks. it IS, however as hard to control as one would think it is to grow. for this reason i would suggest skipping that FOR NOW. i'd say get back to that one once you've worked the kinks out and everything is growing fine without issues. this way it can be your sole source of frustration instead of compounding another issue. nobody wants to be picking riccia out of everything and battling algae at the same time.
i agree with cg91 about the apons 100%. mine are starting their end of season rituals as we speak sending shoots to the surface, etc.. i've been lucky enough to have a bunch to winter over in-tank and come back religiously. here's a pic of one... and it's successfully reproducing ...

And I will get rid of the Sagittaria I thought it was from SE Asia. I'll just stick with the riccia and let the Utricularia graminifolia grow out a bit if I find it.
Ok so I just bought a few Zebra Nerites to add to the one I have already from the o'so lovely msjinkzd and about 20 MTS' from wespastor to help stir up my substrate.
