I also have been known to make some great ones.. Just a touch of baking powder to the mixture makes them, just right fluffy! To me, an omlette is not an omlette unless Velveeta cheese is part of it... mmmm...
I've not tried baking powder, Joe..I'll have to give it a shot. Velveeta is essential, and I add some shredded cheddar too.
I pre-saute my veggies so they aren't so raw either.
Welcome, Bluegreen...this is where we discuss everything besides fish...of course you can bring them up to if you'd like. I don't like fish in my omelets, but shrimp or crab is great
About the baking powder - use only 1/4 teaspoon or so for 2 to 4 omlettes. It really does work! I need a report from you... A mix of cheddar and Velveeta sounds great!

Don't let them 'under-cook' your hash browns like Perkins did to me a few weeks back! I don't know how you like them, but mine better be slighly 'crispy'!
