I have a 29 gal and I am a somewhat beginner fishkeeper. I will be planting the tank. I want something more than the average tetras/barbs, even though that would be nice. I want some interesting fish, maybe on the larger side (dont wanna overstock tho) I want something unique! Also, im not made of money, so lets not break the bank. Any help is appreciated!!!

(btw ive seen blue rams, but im a beginner so i dont wanna mess with that)

There are a lot of tetras that are not common. Many are small, as well, so you could have a fiar number and see good schooling behavior. Check http://msjinkzd.com/ for some ideas. Great source of healthy stock, as well. I'm a big fan of dwarf pencil fish, and you could have 10-15 easily, with 5-6 of the smaller cories to occupy the bottom of the tank. If you want big fish, I can't really help, just not my thing.

A single angel fish as a center piece fish is nice in a 29g. A single keyhole cichlid has a lot of personality too.

Shell dwellers, Julies or even a colony of the Brichardi complex fish.
I'm growin out some Daffodil right now and not only are they pretty slow growers and not showing any pairing behavior yet (largest is 2") they are peaceful to my neon tetras and ignore my plants.

I did have a breeding colony of Brichardi many years ago, the older fry begin to care for the newer fry and the parents tolerate their own fry even into adulthood. a pretty cool tank idea if youre looking for something a little out of the ordinary. Its worth noting too that Julies and shell dwellers will also form colonies.
